My absolute favorite thing about weekends are the slow mornings. My weekday mornings are an absolute mess, I snooze the alarm forever, I get up way too late and end up being super busy resulting in no time for breakfast before I rush out the door. That in itself is quite contradictory, since I’m otherwise a HUGE fan of slow mornings and having loads of time for a delicious breakfast.
That’s exactly why weekend mornings are something I look forward to all week. I can spend a lot of time during the week fantasizing about what kind of breakfast I want to prepare Saturdays and Sundays.
Living in Copenhagen it’s hard not to see matcha everywhere I look. Many cafés in Copenhagen are now serving matcha in all possible kind of ways, for example as matcha lattes or as matcha bowls. I have to admit I’m pretty crazy about it.
I’ve actually baked with matcha a few times before. The fine powder adds the most lovely green color to the cake and it also adds a really interesting and good dimension to the taste. Find my recipe for matcha and raspberry tart here.

Here’s an idea for the perfect “clean you kitchen cabinets”-project: Granola bars. The delicious snacks can be made in sooo many different variations, just to your liking.
Once again I’ve invited a camera crew into my tiny little kitchen to show you guys how I handle my baking process. In a collab with the wonderful Danish new concept “Mig og min mad” (My food and I) a range of cute videos have been born, and I’m so proud to be a part of the project.
